Why Frozen Corn Is Healthier Than Fresh
Fresh vegetables are generally a better choice than frozen or canned varieties because they are higher in nutritional value, but when it comes to corn, frozen is actually the better way to go. Why is that? According to TastingTable, it’s because corn starts losing nutrients when it is no longer refrigerated and sweet corn starts to lose its sweetness because the sugar begins to turn into starch as soon as it’s picked.
For me, that was shocking! However, the more I thought about it, It does make sense. The same methodology goes for grapes! Frozen grapes are actually better for you because their sugar is “lower.”
The only exception to this is when corn is in season from May to September and fresh corn is better during those months. Since corn is grown in every U.S. state, fresh corn is readily available. You should consume your corn as soon as possible when you buy it fresh, preferably on the same day you buy it to get the most flavor and nutrition.
If you can’t eat it on the day you purchased it you can put it into a resealable bag or plastic container and store it in the refrigerator with the husks on. The recommendation is to eat it within two days for the best results.
