Easy & Cheap Meat-Free Recipe For You To Try!
So it seems like everybody is spending a little more time in the kitchen during quarantine, and one of my favorite things to do is try new recipes. This meat-free *beef & peppers* idea came to me randomly, but once I cooked it, I loved it and now I cook it at least once a week!
I’m not 100% meat free, but I do enjoy cooking meat free and this recipe is one of those that taste so good, you don’t even realize it’s not real beef! Also…this recipe is very cheap! You legit only need…
- “meat”
- 3 peppers
- Rice (I use Basmati or Jasmine)
- Sweet onion
- Broccoli
That’s it!
Here’s what the “beef” looks like. I get it from the frozen section in Publix:
Easy instructions too… get all your veggies out:
Cut all of them up, I put my broccoli in the oven with olive oil, garlic powder, onion powder & coconut aminos and then cook the cut up onions & veggies stir fry. I put the onions on first for a few minutes because they take a little longer.
Then you cook the rice just like normal (instructions are typically on back of box).
AND THEN WALA! Look at this 100% Vegan meal!
The sauce is a homemade “yum yum” sauce basically. You can make it vegan, or you don’t have to…but here’s what I mix together for it: mayo (most grocery stores have vegan mayo & it’s actually not bad), sirracha, onion powder, garlic powder, little bit of water).
