LauRen’s Favorite Kung Pao Cauliflower
Anytime is a perfect time to enjoy cauliflower with a nice dry white wine from Bordeaux. Left to me I would eat it every day if I could. Let’s disregard the popular opinion that Cauliflower is bland. Well, I guess they keep making it the wrong way. By using the Kung pao cauliflower recipe from Molly Krebs’s new cookbook, Eat More Plants, you would enjoy every bit of cauliflower.
It only takes 15mins to prepare and cook, which makes it a go-to for a quick and easy cooking.
The ingredient you would need for two servings are
FOR THE SAUCE
- 2 tsp rice wine vinegar
- 2 tsp soy sauce
- 2 tsp agave nectar
- 1 tsp hoisin sauce
- 1 tsp grated fresh ginger
- 1 tsp cornstarch
- 2 tsp sesame oil
- 2 tsp chili-garlic sauce
- 3 garlic cloves, minced
- Pinch of crushed red pepper flakes
FOR THE CAULIFLOWER
- 2 tsp vegetable oil
- 1 medium head cauliflower, cut into florets
- Kosher salt and freshly ground black pepper
- 1 tsp sesame seeds
- 2 scallions, thinly sliced
- ¼ cup roasted salted peanuts, roughly sliced
- ¼ cup roughly sliced fresh cilantro
To make the sauce
Mix vinegar, soy sauce, agave, hoisin sauce, ginger, cornstarch, sesame oil, chili-garlic sauce, garlic and red pepper flakes in a bowl and set aside.
To cook the cauliflower
- Place a skillet over medium to high heat then pour vegetable oil and leave to heat. Next, throw cauliflower in the skillet, and then spice it with a pinch of salt and black pepper. Sear for 3 minutes, until golden brown. Flip and sear the other side of the cauliflower for 3 minutes.
- Pour the sauce in the skillet and mix. You would know its ready when the sauce becomes thick and the cauliflower is tender. Remember to reduce the heat to medium.
- Then finally, you can add your cilantro, peanuts, sesame seeds, and scallions. You can spice it to your taste by adding extra salt and black pepper.
