Try Uncured Bacon and More
I have found some of the best bacon at my favorite little mom & pop grocery stores, but they’re disappearing. Healthy Home Market was one of them that I miss dearly. I found uncured bacon to be the best alternative when having those cravings and taking the guilt away. Not sure why, but uncured bacon actually tastes better. It doesn’t contain nitrites, and some brands have less sodium and no sugars which makes it somewhat healthier. Below are different types of bacon.
Let’s start with streaky bacon, aka the typical American bacon you’ll find in most grocery stores. Now let’s explore Back bacon. This cut includes pork loin from the back of the pig. Pork belly is one of my favorite cuts and we used to fry it up for breakfast. Have you ever heard of Collar bacon? Collar Bacon is a good one if you like heavily marbled with fat, plus it’s expensive and makes a nice BLT. Pork Jowl is a very fatty piece pork from a pig’s cheek….yum! lardon, also spelled lardoon is served cubed in salads or in French cuisine, braised or roasted. Do you like Canadian bacon? It’s made from the lean eye of the loin and is ready to eat, and taste kind of like thinly sliced ham. Lastly, I leave on a high note mentioning the all time favorite Pancetta!! Pancetta is derived from pork belly.
