When the weather turns colder I turn to comfort foods.  And, what's more comforting than soup?  So, this week's edition of Dishin' With Debbie is a warm bowl of Minestrone Mini Pierogy Soup.  Mrs. T's Pierogies are a great go to for easy family weeknight meals.

The soft, pillowy pasta pockets filled with all sorts of yummy ingredients hit the spot on cold nights.  And, Mrs. T's Pierogies are incredibly versatile.  I've used them in everything from salads to lasagnas to pot pies and stir fry dishes.  I love the fluffy whipped potatoes and cheese fillings, as well as other varieties.  Mrs. T's Pierogies offers plenty of options including spinach, bacon, feta, cheddar and more.

And, in this Dishin' With Debbie, the pierogies act as a sort of noodle or dumpling component of the soup.  The recipe comes together easily and quickly.  And, the flavors are delicious.  I cut the original recipe in half for demonstration purposes.  But, I know you'll want to make the full one!
