Dishin’ With Debbie-Spicy Apple Sticks
When healthy is the word of the day, it’s important to always have healthy snacks prepared and ready to grab. I first saw this recipe using jicama, but I thought I would swap the jicama for green apples. The results were amazing! It’s so quick and easy. It can be served alongside a heavier main dish to lighten up the plate. Or, it’s great on top of a salad in place of croutons for a nice crunch. I think it would be equally yummy on a fish taco. But, we love it as a snack to help satisfy our chip cravings! Here’s what I did.
Ingredients:
1 large green apple
zest of 2 limes
juice of 1 lime
1/2 teasponn cayenne pepper (that results in a fairly spicy dish, use less for milder spice)
1/2 teaspoon smoked paprika
pinch of salt
1/4 cup chopped fresh cilantro
Directions:
Peel and core the apple. Chop apple into matchsticks. Place into a bowl. Zest the limes, and mince the zest before adding to the bowl. Add the juice of one of the limes. Toss in the spices and cilantro. Stir to combine. Enjoy right away, or store covered in the fridge for up to a week…if it hasn’t been devoured before then!
