I love a good salad, especially in the spring and summer when the veggies are fresh! Here in the South, we love our homegrown tomatoes. On a sandwich or in a salad, they’re the best! Southern Living has a few “Lost Salads of the South” recipes and I’m loving a few of them.

When I was younger, I LOVED summer! Days by the pool getting a tan…the best! Now, summer isn’t my favorite season. I don’t know if it’s menopause (I’m supposedly post-menopausal) and/or the side effects from the cancer meds I’m on, but I have some serious hot flashes. And it’s not the type of hot when you walk outside and it’s 90 degrees. It’s an internal heat that cannot be cooled down with air conditioning. It sucks! Outside of loving veggies, this is another reason that I love salads. No oven!

Most folks are looking for lighter fare when the weather heats up, and this salad looks delicious! And you don’t have to turn the oven or burner on. The recipe for the “Herbed Chicken-and-Rice Salad” looks yummy! You can use a rotisserie chicken and microwaveable rice for this dish. All you have to do is chop up some fresh veggies and whip up a quick lemon dressing. This is on my “must make” list!

The other salad on my “must make” list for this summer is the “Heirloom Tomato-Cracker Salad”. I LOVE heirloom tomatoes. You can usually find them at the farmer’s market beginning in late June. Cutting up vegetables, making a quick dressing, and crumbling crackers is all the work for this salad. Definitely one that you can have as a meal, or as a side dish.
