The reasoning behind this is simple. If you don't empty the water from the machine, your Keurig is never given the opportunity to fully dry out. The inside of your Keurig then becomes a breeding ground for mold!

If you'd rather not drink mold with your coffee, you should clean and dry the inside of the machine once per day. If you're concerned about mold growing inside your Keurig, you can also mix a solution of half water and half vinegar and run it through the machine, the same way you would go about making a cup of coffee.
